Blueberry French Toast

Ingredients

  • 1 slice thick brioche
  • 2 eggs
  • 200ml whole milk
  • 50ml cream
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 20g butter (for cooking)
  • 100g fresh blueberries
  • 50g toasted coconut flakes

Cinnamon Sugar:

  • 2 tbsp sugar
  • 1 tsp cinnamon

Chantilly Cream:

  • 100ml heavy cream
  • 20g icing sugar
  • 1 tsp vanilla extract

Instructions

Step 1

In a bowl, whisk eggs, milk, cream, sugar, vanilla, and cinnamon together.Dip each slice of bread into the custard mixture, letting it absorb well.

Step 2

Heat butter in a pan over medium heat. Cook the soaked bread slices for 2-3 minutes per side until golden brown.

Step 3

To make chantilly cream, whisk together the cream, icing sugar, and vanilla together until soft peaks form.

Step 4

Plate the French toast, top with fresh blueberries, toasted coconut flakes, and a generous dollop of Chantilly cream.
