PAN CON CHICHARRÓN ; A firm favorite as a breakfast item in Peruvian cuisine. Crunchy pieces of pork accompanied by crispy sweet kumura and zesty red onion relish wrapped inside freshly baked bread, all in one bite - this is truly the best way to start your day.

Serving Size: 4-5 people
Ingredients
Salmuera (Brine)
- 100g of salt
- 1L of water
- 3 garlic cloves
- 2 bay leaves (or any other herbs of your preference)
Marinade
- 1 kg of Pork Belly (no bones)
- 1 tbs of Aji Panca
- 1/2 teaspoon garlic paste
- pinch of cumin and pepper (DO NOT add SALT)
Salsa Criolla
- 2 red onions chopped
- freshly squeezed lime
- rocoto chili pepper (or any other fresh chili)
- salt & pepper
To serve with:
- Fried orange kumara
- White soft bread bun (Pan Frances)
Instructions
Step 1
Salmuera: Immerse the 1 kg of pork belly in 1 litre of water with 100 gr of salt, garlic cloves and bay leaves. Leave it for 3 hours. Remove, dry the pork (especially the skin) and let it rest while you make the marinade.
Step 2
Marinade: Mix all the ingredients together until it becomes a paste. Paint with the help of a brush all the pork belly.
Step 3
Take the pork belly to a rotisserie and let it cook for 45 minutes to 1 hour.
(Another option if you do not have a rotisserie : Boil the pork belly in 1 Lt of water for one hour)
Step 4
Slice up the pork to your prefrence of thickness.
(Another option if you do not have a rotisserie : Very important - dry the meat completely. Cut the pork into 4 -5 pieces and deep fry it. Cover with a lid and be careful because if the pork is not completely dry, the hot oil will splash everywhere. Slice up the pork thin or thick - it's up to you).
Step 5
Cut the kumara into thin slices and fry them.
Step 6
Salsa Criolla- Cut the onion (Juliana of feather cut), squeeze 1 or 2 limes, salt, pepper, chop in little squares rocoto or fresh red chili and add fresh whole mint leave. Mix well.
Step 7
Build your sandwich - Use fresh white soft bread bun, cut in the middle. Insert the fried kumara and the pork slices and top it up with heaps of salsa criolla.
ALL DONE !
Tip
ENJOY it in the Peruvian way together with a cup of black coffee. The combination of the sandwich together with the coffee is what makes this breakfast (for Peruvians) or any time meal even more special.
