Ingredients
- 500ml cream (soft peaks)
- 500g mascarpone
- 1 table spoons vanilla paste
- Meringue (1 pack, or hit up Gina from Pebbles)
- 1 pack brandy snaps
- 1 terrys chocolate orange
- Zest of one orange
- 1 tin condensed milk caramel
- 1 punnet of strawberries (cut randomly)
- 1 punnet of pomegranate seeds
- Flowers/more chocolate
Instructions
Step 1
In a stand or hand mixer, add your cream and whip until soft peaks.
Step 2
To the whipped cream, add the mascarpone and vanilla paste and whip until just incorporated (around 1-2minutes),
Step 3
Next fold in your desired ingredients - we went for brandy snaps, Terry’s chocolate, meringues, pomegranate and a zest of an orange.
Step 4
To assemble, grab whatever bowl you desire and spread a layer of condensed milk caramel (as much as you desire) followed by your eton mess mixture.
Step 5
Finish topping with further meringues, more fruit, flowers and a sprinkling of chocolate.
