Hand Pulled Noodles

Whether you call it ramen, noodles, or pasta; we all have our own unique version of this universally loved comfort food. Juno from 5th Street teaches us how she makes her traditionally inspired breakfast that reminds her of home back in Chengdu. Hand pulled noodles with literally the simplest ingredients you'll ever see along with a sizzling spicy sauce to mix through.

Ingredients

Noodles:

  • 370g - Strong flour
  • 3g - Salt
  • 190g - Water

Additional Toppings:

  • ¼ Head of Bok choy

Sauce:

  • Soy sauce
  • Rice vinegar
  • Spring onion
  • Chili powder
  • Salt
  • Sichuan pepper oil

Instructions

Step One

Prepare a clean bowl and combine the flour and salt together, add water gradually in three intervals and check that the consistency is just slightly firmer than dumpling dough.

Step Two

Knead thoroughly until the surface of the dough is smooth and can be handled without sticking to your hands. Cover and rest the dough for one hour.

Step Three

The dough should now be very soft and smooth. Briefly knead the dough again then break apart into ten equal portions and shape into small balls. Cover your portions with a tea towel and rest of an additional twenty minutes.

Step Four

Prepare a clean tray and apply canola cooking spray generously to the surface of the tray. Begin by rolling and pressing the dough ball to an oval shape and then place onto the oiled try. Continue brushing oil onto the dough to encourage malleability down to a long rectangular sheet about half a centimetre in thickness. Cover your oiled dough portions with clingfilm overnight or at least for two hours in the fridge.

Step Five

Prepare a cooking pot with enough boiling water to allow the noodles to float and circulate. Add a pinch of salt and blanch your bok choy, transfer into the bowl to reserve.

Step Six

Bring your rested dough back up to room temperature and create an indentation down the middle of the dough length ways using a chopstick. Then begin pulling the dough from the middle and gently encourage the dough the stretch by simultaneously moving your hands up and down.

Step Seven

Bring your pot of a water to a rolling bowl and once reaching your desired thickness or around one to two millimetres, drop the noodles into the pot to cook for one to two minutes, or until the noodles float to the top.

Step Eight

Incorporate the ingredients for the sauce together to your taste into a serving bowl. Then transfer the noodle into the serving bowl and sprinkle some sesame seeds and chili powder on top of the noodle. Finally pour half cup of hot oil pour over the noodles and mix well, enjoy it.
