Southern Fried Chicken and Chips

Ingredients :

  • 6 chicken wings
  • 3 cups pickle brine
  • 200g Makikihi Straight Cut Fries

Dry Batter :

  • 1 cup all purpose flour
  • ¼ cup rice flour
  • ¼ cup corn flour
  • 2 tbsp paprika
  • 2 tbsp cayenne

Wet Batter :

  • Buttermilk
  • Two tbsp hot sauce

Nashville hot oil

  • 1 ½ cup hot oil
  • 3 tbsp cayenne
  • 1 tbsp fennel seed
  • 2 tbsp salt

Instructions

Step 1

Put 6 chicken wings into a bowl and pour pickle brine over and leave overnight.

Step 2

Whisk flour together to make a dry batter, set aside.

Step 3

Make the wet batter by combining buttermilk with hot sauce.

Step 4

Coat brined chicken wings into seasoned flour, then transfer to wet batter, then back to seasoned flour again.

Fry in 170c oil for 9 minutes.

Step 5

Fry chips until golden brown and season with salt.

Step 6

Make the hot oil by pouring hot oil over cayenne, fennel seed and salt. Dip the cooked chicken in hot oil and start plating.

Step 7

Serve with slaw and pickles. Enjoy
