Ingredients
- 125g butter
- 105g cake flour
- 6g baking powder
- 105g egg
- 85g sugar
- 30g honey
- 3g cinnamon
- 2g cardamom
- 2g nutmeg
- Pinch of black pepper
- 120g fruit mince mix
Instructions
Step 1
Brown butter and set aside to cool.
Step 2
Beat the eggs and sugar and honey until pale and fluffy.
Step 3
Sift dry ingredients into the egg mixture and carefully fold into the mix.
Step 4
Fold in the cooled brown butter. Then fold in the fruit mix.
Rest overnight ideally, an hour will do.
Step 5
Pipe madeleine moulds 2/3rd full. Bake at 180C for 12-16 minutes, until the top of the madeleines is no longer wet.
Step 6
Cool madeleines.
Step 7
Melt a little bit of butter, brush onto madeleines and immediately pack with icing sugar to finish.
