Strawberry Matcha Tart

Tart shell:

Buy any supermarket brought NON-puff pastry dough and tart tins you have at time. Bake following instructions on the packaging !

Mochi:

  • Glutinous rice flour (uncooked) 75g
  • Milk 160g
  • Sugar 15g
  • Butter 4g, and spare for oiling gloved hands.

Method

Step 1

Microwave (First Round) In a microwave-safe bowl, whisk the glutinous rice flour, water, and sugar untilsmooth. Cover the bowl loosely with plastic wrap or a microwave-safe cover. Microwave for 1 minute on high power

Step 2

Remove the bowl (careful, it will be hot!) and stir the mixture well using a spatula

Step 3

Microwave (Second Round). Cover again and microwave for another 1 minute. Stir again to ensure even cooking.

Step 4

Microwave (Final Round) Microwave for 30 seconds to 1 minute, depending on the power of your microwave. The mochi should look shiny, translucent, and stretchy when fully cooked.

Step 5

Dust and Knead. Sprinkle your work surface with cornstarch or potato starch and wear glovesthat is oiled with butter. Transfer the mochi onto the dusted surface. Knead gently until it’s no longer sticky.Wrap in clingfilm and set aside for tart assembly later.


Strawberry Jam Ingredients :

  • 1kg frozen strawberries
  • 200g granulated sugar (adjust to taste)
  • 2 tablespoons lemon juice

Matcha Whipped Cream Ingredients:

  • 240ml heavy whipping cream (cold)
  • 8g matcha powder (adjust to taste)
  • 30g tablespoons powdered sugar (or adjust to taste)

Step 1 :

Chill Your Tools. Place your mixing bowl and whisk or beaters in the fridge for about 15 minutes. Cold tools help the cream whip faster.

Step 2:

Sift the Matcha Powder. Use a fine-mesh sieve to sift the matcha powder into a small bowl. This prevents clumps in your whipped cream.

Step 3:

Combine Ingredients. In the chilled bowl, add the cold heavy cream, sifted matcha powder, powdered sugar, and vanilla extract (if using).

Step 4:

Whip the Cream. Use a hand mixer, stand mixer, or whisk to beat the mixture on medium speed. Gradually increase to high speed, whipping until soft peaks form. Be careful not to overwhip, as the cream can turn grainy.

Step 5:

Taste and Adjust Taste the whipped cream. Add more sugar or matcha if needed, then whip briefly to combine.

Step 6:

Use or Store. Use the matcha whipped cream immediately and transfer into a piping bag with any star tip of your choice.
