Supreme Supreme's Chef - Double Stack Pancakes

This simple, delicious fluffy pancake recipe, will become your next new favourite Sunday breakfast to make for your family! These easy pancakes come together so quickly and you will never go back to boxed pancake mix again.

Ingredients

Serving size: 8

For Wet Mix:

  • 3 whole eggs
  • 3 egg yolks
  • 4 cups yogurt
  • 3 table spoons lemon zest
  • ¼ cup lemon juice
  • ½ cup milk
  • 10 table spoons melted butter

For Dry Mix:

  • 640 grams flour
  • 170 grams sugar
  • 12 grams baking soda
  • 9 grams baking powder
  • 12 grams salt

Instructions

Step 1

Mix in all wet mix ingredients until combined.

Step 2

Sift in the dry mix and fold it in the wet mix until there are still a couple lumps left. Set it aside for 30 minutes.

Step 4

To cook the pancakes, pour over half a cup of batter into an oiled / buttered pan.

Step 5

Leave to cook for 2-3 minute until it starts to rise. Once flipped, leave it for 4 minutes.

Step 6

Serve with butter and maple syrup, enjoy!

Tips

  • To achieve a smooth, brown colour on your pancake, do not over butter the pan.
  • Don’t overmix the batter.
  • You can measure out the dry ingredients and pop them in a ziplock bag or jar, then when you want to make pancakes, just add wet ingredients.
